Noteworthy & June Fun-Fact Dates

June 1 – Say Something Nice Day

June 5 – World Environment Day—a day meant to raise environmental awareness across the globe.

June 8 – Upsy Daisy Day set aside to encourage you to face the day positively and to get up ‘gloriously, gratefully and gleefully’ each morning. 

June 14 – Flag Day (U.S.). Be sure to raise the flag! 

June 19 – Juneteenth (also known as Freedom Day or Emancipation Day). 

June 20 – the summer solstice, which heralds the start of summer in the Northern Hemisphere. It’s the day with the most hours of daylight, so enjoy! In the Southern Hemisphere, winter begins at this time.

June 21 – Father’s Day

June 21 – also National Indigenous Peoples Day (Canada).

June 24 – brings Midsummer Day, traditionally the midpoint of the growing season, halfway between planting and harvesting.

June 30 – Asteroid Day

The Spring ’21 Balanced Habits™ Balanced Habits™ 4-Week Program ends this month and we had a record number of participants who took action to learn how customized nutrition affects them, how great it felt to develop more confidence in and out of the kitchen, and to kick start their health in a positive direction!  Since 2008 we have had a whopping 86,421 people go through this proven program all across the USA and Canada and now on American Samoa!

Balanced Habits™ Recipe of the Month

Zucchini Oven Chips

Yields: 4 servings (3/4 cup) 1 serving = slightly >1 unit carbs

Ingredients:

1/4 cup Panko Breadcrumbs
-or make your own using whole wheat bread, coarsely ground 

1/4 cup (1 oz.) Freshly grated Parmesan Cheese

✌ finger pinch Kosher Salt

✌ finger pinch Smoked Paprika

✌ finger pinch Garlic Powder

✌ finger pinch Ground White Pepper

2 Tbsp. Low Fat Milk

2 1/2 cups (about 2 small) Zucchini, sliced 1/4” thick

Olive Oil Cooking Spray

Directions

Pre heat oven to 425°  Place foil or parchment securely onto a baking sheet that is large enough to accommodate an oven-proof wire rack.  Place rack onto prepared baking sheet and spray it with Canola; set aside.

Step One

Combine first 6 ingredients (thru pepper) in a medium bowl; combining with a whisk; set aside.

Step Two

Place milk in a shallow dish.  Dip zucchini slices into milk then dredge into the breadcrumb mixture, then onto the prepared wire rack.  When all the zucchini slices are on the rack, place the baking sheet into the oven and bake for 3o minutes, or until browned and crispy.  Serve immediately.

-all portions are “heaping”

2 unit Portion: 1 1/2 cup

3 unit Portion: 2 1/4 cup

4 unit Portion: 3 cups

5 unit Portion: 3 3/4 cup
