Yields: 30 – 1 unit carb cookies

Ingredients

3/4 cup Unsalted Butter, softened
1 cup Splenda or Truvia or Stevia
(not the sugar-blend)
2 tsp. Freshly Grated Lemon Peel
1 1/2 Tbsp. Raw Honey
1 Whole Egg, slightly beaten
1/4 cup Egg Beaters
1/2 cup No-Sugar Added Applesauce
1/3 cup Apple Juice Concentrate
1 3/4 cup White Whole Wheat Flour
2/3 cup Old Fashioned Oats
1 tsp. Baking Soda
1 tsp. Ground Cinnamon
1/2 tsp. Ground Cardamom
1/8 tsp. Ground Nutmeg
1 cup Diced Fresh Apples
1/2 cup Dried Currants

Directions

Pre heat oven to 325 F. Lightly spray a baking sheet with cooking spray, or line with parchment paper.

Step One

Using a mixer, beat the first 4 ingredients until fluffy. Add beaten egg and Egg Beaters. Beat until fully combined.

Step Two

Combine applesauce and apple juice in a small bowl; set aside.

Step Three

Combine flour and next 5 ingredients, thru nutmeg in a
medium bowl using a whisk. Gradually add flour mixture to butter mixture, alternately with apple juice mixture, beginning and ending with the flour mixture. Beat at low speed until blended after each addition. Stir in diced apples and currents.

Step Four

Drop by Tablespoonful’s, 1 1/2 inches apart onto the prepared baking sheets. Bake 10 – 12 minutes. Cool on a wire rack.
