Sliced Butcher-cut Deli Turkey Breast

Sweet Red Pepper Hummus

Sliced Tomatoes

Sliced Cucumber

Slice Wheat, Flourless, Sourdough 

4/5 units adding apple/pear

Step 1

Either toast bread or not. Spread suggested portion hummus on toast. Place however many slices tomatoes and/or cucumbers on hummus. Top with sliced turkey.

Sweet Red Pepper Hummus

Yields

about 2 cups

Ingredients

Olive Oil Cooking Spray

1 cup (2 avg.) Red Bell Pepper, chopped

1 Tbsp. Extra Virgin Olive Oil

1 Tbsp. Fresh Lemon Juice

1/2 tsp. Apple Cider Vinegar

1 Tbsp. Fresh Parsley, chopped

✌ finger pinch Kosher Salt

✌ finger pinch Ground Cumin

1/2 Tbsp. Garlic, minced

1 Tbsp. Splenda, or Truvia or Stevia (or 3 packs)

Half 15 oz. can Garbanzo Beans, rinsed, drained

1 cup Low Fat Cottage Cheese

Step One

Spray a non-stick sauté pan with olive oil. Sauté chopped red peppers for 4 – 5 minutes. Set aside.

Step Two

In a food processor or blender, add all ingredients, including the sautéed red peppers. Purée for 1 minute, scraping sides and continue to purée until smooth. Refrigerate for at least 1 hour.

Note

It’s advisable that you make your own hummus so you can control the carbs and fat and have added protein to improve it. 

Hummus lasts for at least 1 week in an airtight container in the refrigerator.
