Positivity is in the air!  Spring is about ready to make its appearance and with that comes a renewed sense of purpose, growth, and the desire to get back into touch with nature. As the dirt starts its spring thaw, we are reminded of the opportunity to plant our upcoming seasonal gardens to reap the benefits of homegrown fresh produce. If you began your garden in cardboard egg cartons, in January or February, the time is nearing to transfer the little seedlings into the ground to finish their ultimate growth potential.

Much like your garden, use this month to fully awaken from the slumber of the winter months. Venture outdoors to thaw and enjoy the warmer sun filled days ahead. Change your workout routine to breathe the fresh air into your lungs as you renew your commit of greater health. Focus on living a longer life filled with quality, energy, strength, confidence, positivity, and vitality quite like living your life with a TOTAL WELLNESS mission

Balanced Habits Recipe of the Month

Stir-Fry Salmon Power Bowl

✔ Could use Tuna, Albacore, Swordfish…or other more “steak-like” fish choices.

2 Tbsp. White Miso

2 Tbsp. Ghee (Clarified Butter)

1 Tbsp. Cool Water

2 Tbsp. Avocado Oil, divided

1 lb. Salmon, skinned, cut into 1” pieces

3 Shallots, sliced

1 Medium Zucchini, halved length-wise then sliced into 1/4” wedges

1 1/2 cup Frozen Shelled Edamame, thawed

5 Large Basil or Mint Leaves, roughly chopped

4 oz. Soba Noodles, cooked according to directions on package

Optional Addition *Asian Garlic Chili Sauce

Make soba noodles.

Step 1

Whisk miso, ghee and water in a small bowl; set aside.

Step 2

Heat a large skillet over high for 2-3 min. Add 1 Tbsp. oil. When it shimmers, place chunks of salmon in the skillet, not touching sides. Cook, gently stirring until almost cooked through; 2 – 3 minutes. Transfer to a plate.

Step 3

Reduce heat to med-high and add remaining 1 Tbsp. oil, shallots, zucchini and edamame to the skillet; stir until vegetables are tender-crisp; 3 – 4 min. Reduce heat to medium. Add miso-ghee mixture to coat vegetables. Add reserved salmon chunks and chopped basil. Gently combine.

Scoop mixture into individual serving bowls on top of soba noodles. Can be served immediately while hot, or at room temperature or completely cooled. Don’t store until everything has been fully cooled to room temperature.

✔ Remember that 1.5 oz. cooked salmon = 1 unit protein

✔ A yummy *free addition

✔ Could use Tofu in place of salmon
