One month into the New Year. Many of you reading this have been focusing on goals or mindset shifts that you determined at the onset of the New Year. Let’s examine a “goal.”

Goals are not really NOW. Goals do not actually exist, they are simply an IDEA. So what about NOW? What about TODAY? If we are so fixated on these future accomplishments, then every moment prior to reaching those accomplishments can feel disappointing or worse; a failure. ☹

It’s a PLAN that has the power. A plan is the action you take RIGHT NOW which actually has substance. So my friends, i n order to reach a GOAL you must have an action PLAN.

Balanced Habits™ Recipe of the Month

Apple Cloud Cake

Yields: 9 x 9” square cake


3 cups Apple (usually 2 large), peeled, grated

8 Egg Whites, at room temperature

Or 1 cup *Aquafaba

2 Tbsp. Fresh Lemon Juice

1/2 cup Granulated Sugar

1 tsp. Cinnamon

1/2 tsp. Cardamom

1/2 tsp. Vanilla Extract

1 1/2 cups White Whole Wheat

Flour, sifted

1/2 tsp. Salt

1/2 cup Walnuts, chopped

Directions Pre heat oven to 350° F. Generously spray a 9 x 9” cake pan with avocado oil then dust with flour; set aside.

Step 1 Place egg whites (or aquafaba) i n a cold bowl and beat with an electric mixer on high speed until stiff peaks form.

Step 2 Meanwhile, in another large bowl, add grated apple and remaining 8 ingredients (thru walnuts). Combine well.

Step 3 Use a spatula to fold in egg whites (or aquafaba) until fairly well combined. Transfer to prepared baking pan and place into preheated oven and bake for about 30 min., or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for at least 15 min. before slicing.

→ Separate when cold, let whites come to room temperature

→ Make this Vegan using *Aquafaba
(the liquid from a can of Garbanzo Beans… will need two 15 oz. cans for the liquid)

→ 3 cups Apple (usu. 2 large), peeled, grated

→ We prefer Honeycrisp Apples

→ A food processor with the grating attachment makes this a snap

→ We do not portion our desserts; please practice portion control
