Happy summer 2021! How is it that the last month of summer is already upon us? Hoping you have been having a wonderful few months of longer daylight, warmer weather and perhaps even a get-away or two to visit a new or cherished place. If summer months challenge your routine, and you are looking forward to getting back to yours, take this opportunity to examine how you felt. Did you physically feel great, have unlimited energy, regularly slept well, comfortably wore all your favorite clothes and just overall had loads of confidence with your healthy body?
Spend just one minute each day to envision you, being confident, self-possessed, and in control of your own decisions as they relate to your health and wellness. Work on loving yourself, your body and your actions to live a more balanced and healthy life each day by creating a personal positive mantra than you can repeat over –n- over about why you deserve to live the life you want for yourself.

Balanced Habits™ Recipe of the Month
Tex-Mex Fiesta Salad with a Pepita-Citrus Dressing
Cilantro-Pepita Citrus Dressing
1/6th of this entire recipe = 1 unit fat
1/3 cup White Wine Vinegar
1/4 cup Orange Juice Concentrate
1 bunch Fresh Cilantro, coarsely chopped
1 1/2 Tbsp. Zested Lime Peel
3 tsp. Zested Orange Peel
1 cup Avocado Oil
1/3 cup Queso Fresco or Cotija Cheese
1/4 cup Raw Pepitas, *toasted prior to adding (Green pumpkin seeds)
Pre heat oven to 300° F
Toast raw pepitas in pre heated oven for 8 min., or until they are slightly crispy, but not browned.
Add all of the above, except pepitas, into a blender. Puree until slightly smooth. It’s ok if the cheese isn’t 100% smooth. Right before you serve the dressing, add toasted pepitas and whisk.
*We like to chill this dressing a bit before we serve it, but it’s not necessary. It will last only about 2 days in the fridge.
Tex-Mex Fiesta Salad
1/6th of this entire recipe = 1 unit carbs
8 cups Romaine Lettuce Leaves
1/2 cup Black Beans, drained, rinsed
1/2 cup Corn Kernels, drained, rinsed, browned a bit w/ avocado oil spray & 1/2 tsp. raw honey
1 small Jalapeño pepper, seeded, finely diced *optional
1 cup Cucumber, seeded, diced
2 large, firm Roma Tomatoes, cut into 6 wedges per
1 slightly firm Avocado, diced
1/4 cup Queso Fresco or Cotija Cheese, broken up with your fingers
1/4 cup Toasted Pepitas
9 Blue Tortilla Chips (Spicy if you want), broken
In a large bowl, arrange the salad ingredients as listed in order, making it look pretty.
Don’t toss the salad until after everyone has marveled at it ☺ Add the dressing now and gently toss, making sure not to smash the avocado
